About Our Beef Cuts
Each side of beef is refrigerated for 18-21 days to ensure optimal aging prior to cutting and fast-freezing.
Our pre-packaged beef is cut as follows:
Our pre-packaged beef is cut as follows:
- Steaks are 1 1/8 inches thick with one steak per package.
- Oven roasts are cut between 3-5 lbs.
- Pot roasts are typically shoulder roasts, great for the slow cooker and typically 3-5 lbs.
- Stewing beef is cut from round steak.
- All other lower grade cuts are processed as ground beef.
- Lean to extra lean ground beef is wrapped in individual packages of approximately one pound
